When the 41st Day Comes: The Story of bakery41

This week, we are honored to introduce you to the Fisher family behind bakery41, a Palestine-based, family-owned bakery offering gluten-free, sugar-free and dye-free baked goods at The Barn & Basket Market. But bakery41 is about so much more than baked goods. It is a story of faith, healing, family and allowing God to use the hardest seasons of life for something beautiful.

The Story Behind bakery41

In 2019, Beckie Fisher was diagnosed with trigeminal neuralgia, an extremely painful neurological condition. She underwent brain surgery, but after the surgery was unsuccessful, she began removing foods that could potentially trigger her symptoms. That journey completely changed the way the Fisher family viewed food.

Then, in 2023, Joe was diagnosed with FSGS and kidney failure and began receiving care through Mayo Clinic. He adopted Beckie’s way of eating, eliminating dyes and heavily processed foods. The changes have made an incredible difference for their family, and Joe’s kidney function is now almost completely normal.

Their journey changed more than their health. It also strengthened their faith and completely redirected their lives.

Joe, a United States Army veteran, eventually left his longtime career with Union Pacific Railroad to follow the new beginning God had placed before their family. In November 2025, bakery41 officially began. Joe and Beckie had already been creating recipes for themselves and for others who needed gluten-free, dye-free or simply cleaner food options. What they did not expect was the overwhelming love and demand for affordable, healthier baked goods.

What began with Joe taking his own food and snacks to work and church, and sharing them with the people around him, grew into baking for others. Eventually, they felt God leading bakery41 to help feed the multitude through both His Word and naturally made baked goods.

Why “bakery41”?

The name bakery41 carries a deeply personal message for the Fisher family. Throughout their difficult seasons, they felt God reminding them that their “41” was coming. The rain would eventually stop. The giant would fall. They simply needed to breathe, hold on and trust that their 41st day was coming.

That message of hope, endurance and faith is now woven into everything bakery41 does.

A True Family Business

bakery41 is completely family-owned and operated. Joe is the owner, and he works alongside his wife, Beckie, and his mother-in-law, Sharon, to create all of their baked goods. Their daughter, Lizabeth, affectionately known as Z, helps answer messages, create posts, make deliveries and produce natural vanilla and body products. She is also the sweet, familiar face of the bakery. Their oldest, Levi, helps cultivate ingredients and serves as the all-around muscle of the operation. He quite literally handles the heavy lifting.

Every member of the family has a role, and every product reflects the love, work and faith they share.

Baked Goods Made Differently

bakery41 does not use artificial dyes, unnecessary chemicals or heavily processed ingredients. Their standard is beautifully simple: use ingredients you can pronounce.

The family is constantly developing new recipes, testing natural ingredients and creating new flavor combinations. They grow many of their own herbs, strawberries and blueberries, and source locally whenever they cannot grow enough to meet the demand.

Their goal is to offer something sweet for even the trickiest dietary needs.

Some of their personal favorites are their cake pops, because no one ever realizes they are gluten-free, and their dye-free treats for children. They are also quickly becoming known for their cheesecakes and gluten-free pies.

The Fisher family believes every child should have the opportunity to enjoy cupcakes, cookies, cake and cake pops, even if that child is diabetic, gluten-free or sensitive or allergic to artificial dyes. That belief has also inspired one of the most meaningful parts of their business: ensuring that no child goes without a birthday cake. If a family is unable to pay, bakery41 will provide a small birthday cake or a dozen cupcakes so that child can still be celebrated.

The Heart Behind It All

For the Fisher family, the best part of owning bakery41 is bringing joy to others while sharing God’s Word and the testimony of what He has done in their lives. They will be the first to admit that there are days in the kitchen when absolutely everything seems to go wrong. They make mistakes, laugh, learn and keep going. They also never back down from a challenge, especially when that challenge means creating something delicious for someone with a difficult dietary restriction.

While they are proud of the products they create, they are even more grateful that bakery41 has become an opportunity for discipleship. They want every customer to taste the love and passion poured into each dessert. Every purchase supports their family, helps grow their business and moves them closer to launching their gluten-free food truck.

And yes, even after the food truck launches, bakery41 will still be available at The Barn & Basket Market!

Bringing Local Together

Being part of The Barn & Basket has given the Fisher family new friendships and access to an incredible community of local vendors and products. Supporting small businesses matters deeply to them because every purchase goes directly back into their bakery and food truck. Local families and small businesses are often overshadowed by large chains and heavily processed products, but shopping locally gives customers the opportunity to choose something made with purpose, care and real ingredients.

When the Fisher family is not working on bakery41, you will most likely find them at church. They describe themselves as a simple, humble, God-fearing family who are incredibly close and grateful to be part of this community.

Their three words for bakery41 say it best:

Completely God led.
