4 lbs beef short ribs
1 onion, diced
3 carrots, chopped
4 garlic cloves
2 cups red wine
2 cups beef broth
2 tbsp tomato paste
2 tbsp olive oil
Salt and pepper
Fresh rosemary and thyme
Preparation
Instructions
Preheat oven to 325°F.
Season short ribs generously with salt and pepper.
Heat oil in Dutch oven and sear ribs on all sides.
Remove ribs and sauté onions, carrots, and garlic.
Stir in tomato paste.
Add wine and simmer 5 minutes.
Add broth and herbs.
Return ribs to pot and cover.
Bake 2½–3 hours until fork tender.
