  • 2 lbs chicken breasts or thighs

  • ¼ cup olive oil

  • Juice of 2 lemons

  • 3 garlic cloves, minced

  • 1 tbsp rosemary

  • 1 tbsp thyme

  • 1 tsp salt

  • ½ tsp black pepper

Preparation

Instructions
  1. In a bowl, whisk together olive oil, lemon juice, garlic, and herbs.

  2. Place chicken in marinade and refrigerate at least 1 hour.

  3. Preheat grill to medium-high heat.

  4. Grill chicken 6–8 minutes per side until internal temperature reaches 165°F.

  5. Rest 5 minutes before serving.
