This recipe is perfect for using fresh seasonal vegetables straight from the garden.

Ingredients

  • 1½ lbs chicken breast or thighs, sliced thin

  • 1 zucchini, sliced

  • 1 bell pepper, sliced

  • 1 cup broccoli florets

  • 1 carrot, thinly sliced

  • 3 garlic cloves, minced

  • ¼ cup soy sauce

  • 1 tbsp honey

  • 1 tbsp sesame oil

  • 1 tbsp olive oil

  • Cooked rice for serving

Preparation

Instructions
  1. Heat olive oil in a large skillet or wok over medium-high heat.

  2. Cook chicken until browned and fully cooked.

  3. Remove chicken and set aside.

  4. Add vegetables and stir fry until tender-crisp.

  5. Stir in garlic and cook 1 minute.

  6. Mix soy sauce, honey, and sesame oil together.

  7. Return chicken to skillet and pour sauce over mixture.

  8. Toss well and cook 2–3 more minutes.

  9. Serve over warm rice.
