Homemade chicken soup is one of the best ways to nourish your family during busy seasons or cold weather. Save leftover bones and vegetable scraps to make your own rich farmhouse broth.

1 whole chicken or 2 lbs chicken thighs
8 cups chicken broth
3 carrots, sliced
3 celery stalks, chopped
1 onion, diced
3 garlic cloves, minced
2 cups egg noodles
2 tbsp butter
1 tsp thyme
1 tsp parsley
Salt and black pepper to taste
Preparation
Instructions
In a large stock pot, melt butter over medium heat.
Add onions, carrots, and celery and sauté until softened.
Stir in garlic and cook 1 minute.
Add chicken and broth.
Season with thyme, parsley, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 1 hour.
Remove chicken and shred meat.
Return shredded chicken to pot.
Add egg noodles and cook until tender.
Taste and adjust seasoning before serving.
